Curious, it does not appear in Android Wear to activate / deactivate the preview of notifications. I just checked Google Play for any new updates, and nothing. I guess it will be a matter of time.

The information about "listening to music offline" is incorrect. This function is not intended to allow you to control the music on your smartphone without an internet connection (in fact, in my experience, no internet connection is required to control music). Rather, it refers to the fact that you can store the desired music on the smartwatch to play it with bluetooth headphones without the need for your smartphone.
